Our jaggery powder comes from a regenerative sugarcane farm in Indapur. The juice is pressed, filtered, and cooked down over firewood in an iron wok until it thickens, then beaten by hand as it cools — that's what gives it this fine, powdery texture instead of a hard block. Nothing refined, nothing added.

It's what we sweeten our own chai with. A spoonful dissolves straight into hot milk, deeper and more molasses-y than sugar. Good in porridge too. Once you've had chai with this in it, plain sugar tastes flat.

How To make chai at home

  • Step 1

    Place 1 mug of water, chai masala, black tea, jaggery/sugar (optional) into a pan. Place on high heat and stir regularly. If you want an extra kick, grate some fresh ginger!

  • Step 02

    Once your chai is strongly bubbling, add equal parts milk.

  • Step 03

    Bring to a boil and simmer for 1-2 minutes. Watch out for your chai overflowing! Reduce the heat and continue to boil.

  • Step 04

    Strain using a strainer and sweeten
to taste
